Most employees dont have the item category memorized, so adding a drop down menu when using the quick filter for the list of item categories would be helpful to all users

We will not be able to do that. The Quick Filter was not designed like that. Even if we did, users would then expect drop-down options for all or almost all other fields.
FYI. We will be changing the lists out to work like the Unassigned Work Order list in the new schedule board. That work should be completed late next year.
